These open faced tuna salad sandwiches are a great meal. They are super easy to make and very satisfying.

We are going to toast some bread for this recipe. I love making it on a piece of baguette. I slice it, drizzle it with olive oil and top it with tomatoes. I then cover the tomatoes with cheese — any cheese that melts works well — throw it into the toaster and voila!

As for the tuna salad, I add finely chopped red onion, capers and jalapeños to the fish. Some lime or lemon juice, mayo and mustard and it is ready to be piled on to the toasted bread. As a final touch, I add slices of avocado and some hot sauce. Absolutely love, love this recipe.

Open Faced Tuna Salad Sandwich
1 – 7 oz. can tuna in water — drained
1 celery stalk – finely chopped
1 tablespoon finely chopped red onion
1 teaspoon chopped capers
1 teaspoon finely chopped jalapeños (optional)
juice of 1 lime or lemon
1 teaspoon mustard (optional)
2 to 3 tablespoons mayonnaise
Salt & Pepper

Mix all of the ingredients in a bowl.

FOR THE SANDWICH –
2 pieces baguette or bread of your choice
Olive oil
tomato slices
2 slices Provolone cheese (or any other cheese that melts well)
Tuna salad
Avocado slices
Hot sauce

Drizzle some olive oil on the bread. Place tomato slices on top. If you do not like cooked tomatoes place them on top of the melted cheese under the tuna salad.

Place the cheese on top of the tomatoes and toast the bread until the cheese is melted.

Top the melted cheese with tuna salad. Top with avocado slices and hot sauce if using. Serve and enjoy!
