This Greek pasta salad recipe is very satisfying and super easy to make. I like using farfalle or bow tie pasta for this recipe but any small pasta will work wonderfully. We are going to make this with cucumbers, tomato, red onion, Kalamata olives and Feta cheese. If you can’t find Feta cheese go ahead and use any white salty cheese. Same goes for the olives. Use any black olive you can find if you have no Kalamatas.
We will also be making a vinaigrette with red wine vinegar for this salad. I have discovered that if you place all of your ingredients in a small jar and shake it vigorously the dressing will always emulsify and be beautiful.

Greek Pasta Salad Recipe
12 oz. small pasta — I used bow tie you can use any small pasta you want
1/2 cup chopped bell pepper
1/2 cup chopped cucumber — peeled and seeded *
1/4 cup sliced red onion
1/2 cup cherry tomatoes — halved
1/3 cup Kalamata olives — seeded and halved
1/3 cup Feta cheese (or any other salty cheese)
Bring a large pot of salted water to a boil. Add the pasta and cook, al dente, as per instructions on the package. Drain and wash with cold water. Place in a bowl.
Add all the vegetables, olives and cheese.
Add dressing (recipe below) and toss. Serve.
The noodles will absorb the dressing so you will need to make more of it if you have left overs. Simply make it and add it again.
*I am using Persian cucumbers so I will simply slice them. If you are using regular cucumber, peel it and seed it. Chop it into small cubes.
FOR THE DRESSING:
1/2 cup olive oil
1/2 cup red wine vinegar
1/2 teaspoon oregano
Salt & Pepper
Place all the ingredients into a small jar with a lid. Cover and shake vigorously. Taste for salt and adjust if necessary.
