This healthy green salad is proof that salads don’t need to be boring. Don’t you hate it when you get a salad and all it has is iceberg lettuce, a slice of tomato and a slice of cucumber? In my opinion that is not a salad!
As you will see here I make mine with a Spring mix base. Feel free to use lettuce of any kind if you prefer. I also add cucumbers, tomatoes, micro-greens, radishes and avocado slices. Feel free to ass raw cauliflower, raw broccoli, beets, carrots, snap peas, jicama or any other fruit or vegetable that you prefer.
Micro greens are loaded in nutrition. I usually use broccoli but you can find radish, kale, collard and pea. I usually find them in the same section where the fresh herbs are at the market.
I like adding nuts or seeds to my salads for some crunch. I will use sunflower seeds, pumpkin seeds and even hemp seeds sometimes. For the nuts almonds, pecans, cashews or walnuts.
Another addition to my salads is protein. I will add chicken, steak, hard boiled eggs, fish, quinoa, beans or lentils as my added proteins.
I usually dress my salads with only olive oil and lemon juice (some salt as well). However, you can use any dressing that you prefer for this.
Healthy Green Salad
Spring greens or baby spinach or lettuce of your choice
Thinly sliced red onion
Thinly sliced cucumber
Thinly sliced radishes
Handful of micro-greens
Handful of pumpkin seeds or almonds or nuts
Protein of choice
Dressing of choice
Place all of the ingredients in a bowl, except for the protein and the dressing. Top with the protein of choice and add the dressing. Toss and serve.
Other vegetables you can add or replace with – raw broccoli, raw cauliflower, carrots, beets, mushrooms, corn.
Other protein you can add or replace with – hard boiled egg, sliced steak, sliced chicken or turkey; bacon, chickpeas, beans of any type, lentils, eggs, cheese.
I like using olive oil and lemon juice or vinegar but use any dressing you would like.
