This broccoli salad with bacon also has Cheddar cheese. It is a great for hot Summer days. The dressing has no mayonnaise. It is sort of a honey mustard dressing that complements all the ingredients beautifully.

I like to cook my bacon in the microwave for recipes like this one. However, you can also cook it in the oven. Whatever you decide, make sure that it is well cooked and crisp.

I used sunflower seeds in this broccoli salad with bacon but you can easily substitute them with chopped walnuts. You can also replace the raisins with dried cranberries.

I do not like to add too much dressing to my salads so I only made one recipe for this. However, if you like yours with more dressing you will have to double the recipe.

Broccoli Salad with Bacon

Serves four to six

4 medium sized head of broccoli
1/4 cup of finely cubed red onion
6 strips bacon — cooked and broken into pieces
2 tablespoons roasted and salted sunflower seeds or chopped walnuts
1/4 cup raisins
1/2 cup shredded Cheddar cheese

Wash the broccoli well. Separate the florets and chop them into small pieces. Trim off the stems and cut those into small pieces as well. You should have about 6 cups of chopped broccoli.

Place the chopped broccoli in a bowl and add the rest of the ingredients.

Add the dressing and toss well.


3 tablespoons mustard — preferably stone ground
1/2 teaspoon prepared horseradish
1/4 cup honey
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 teaspoon garlic powder
1 tablespoon water (more if your dressing is too thick)
Salt & Pepper

Place all of the ingredients in a jar with a lid. Shake vigorously until it is all mixed and creamy.
