These air fryer pork belly tacos are really quite special. Pork belly cooks beautifully in the air fryer. It gets very crisp keeping the meat inside super tender.

We are going to rub the pork in spices and let it come to room temperature. Then we will place it in the preheated air fryer and cook it. While that is cooking we will make a very simple cabbage slaw with cilantro, lime juice and salt. This will bring a level of freshness and crunch to our tacos.

You can use any salsa of your choice for this but here is a delicious one if you are inclined to make one:
6 small or 4 ripe Roma tomatoes
4 tomatillos — husked and rinsed off
6 dry Chile arbol pods (more for spicier)
2 garlic cloves — peeled
1 jalapeño — halved, seeded and membrane removed
1/4 tsp. ground cumin
1/4 of a small white onion — peeled
handful of cilantro with stems — washed
Salt to taste

Place the tomatoes, tomatillos, chillies, garlic and jalapeño in a small pot. Cover with water and simmer until the tomatillos are brownish and the chillies are soft. Cool down and place into a blender with about 1/4th cup of the liquid.

Add the cumin, onion, cilantro and salt. Blend until smooth. Set aside. This salsa will last in the fridge for 2 to 3 weeks in a closed container.

Air Fryer Pork Belly
2 pounds pork belly — cut into 2 -inch strips and then into cubes
1/2 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon Cayenne pepper
1 teaspoon cumin
1 teaspoon oregano
Black Pepper
Oil (I use avocado)

Place the pork chunks in a bowl and add all the spices. Be generous with the salt.

Drizzle some oil in the bowl and mix well. You want to make sure all of the pork is coated.

Leave the bowl on the counter for about 20 minutes until the pork is at room temperature.

Preheat your fryer at 400 F (200 C) for 5 minutes.

Place the pork in the basket, without over crowding. If you need to do so, work in batches.

Cook pork at 380 F (193 C) for 25 minutes. Shake the basket at the 12 to 13 minute mark.

Green cabbage
Corn Tortillas – heated
Salsa of choice

Finely slice a piece of green cabbage into a bowl. Add chopped cilantro and the juice of a lime. Season with salt.

Chop some cooked pork belly and place it in the middle of your tortilla. Top with cabbage slaw and salsa. Enjoy!
