I have made this recipe with Tenesee whiskey, bourbon, Scotch and Irish whiskey. I have to say that I prefer the Irish one hands down. It lends to a smoother cream. However, if you cannot find it please do not hesitate to make this anyway.

I have also found that you will need the full fat in the milk and cream to make this. If you use low fat versions you will not have the same result.

Depending on the cream you are using you might find that the cream separates in the bottle. Simply give it a good shake before serving and that will be solved. I find that it is better to keep this in the refrigerator.

This is what you are going to need for this exquisite Irish cream recipe:

Makes about five cups
1- 14 ounce (397 grams) can of sweetened condensed milk
1 ½ cups (375 ml) of Irish whiskey
½ cup (125 ml) heavy cream
½ cup (125 ml) whole milk
1 TBS (15 ml) chocolate syrup
1 tsp. (5 ml) instant coffee
1 tsp. (5 ml) vanilla extract
¼ tsp. (1.25 ml) almond extract

Place all the ingredients in a blender and blend until smooth.

Transfer to a glass container and keep refrigerated. Shake before serving.
