How to Make Spicy Salsa Roja

Servings
Makes about 1 1/2 cups

✅ Ingredients
2 guajillo chiles
15 árbol chiles
3 large Roma tomatoes, washed and dried
3 unpeeled garlic cloves
1/4 cup chile soaking liquid
Salt to taste
1 tablespoon vinegar (red wine vinegar works beautifully)

👩‍🍳 Instructions
Remove the stems and seeds from the guajillo and árbol chiles. Wear gloves to protect your hands.
Heat a dry skillet over medium heat. Place the chiles in the skillet and press them gently so they char slightly. Work in a well ventilated area. Flip and press a few times until fragrant. Do not burn them.
Transfer the chiles to a bowl and cover with boiling water. Place a small plate on top to keep them submerged. Soak for 20 minutes.
Wipe down the skillet. Add the tomatoes and unpeeled garlic cloves. Char on all sides until blistered and slightly blackened.
Transfer the tomatoes and garlic to a blender. Add the soaked chiles and about 1/4 cup of the soaking liquid.
Add salt to taste and the vinegar.
Blend until completely smooth.

Storage

Store in a sealed container in the refrigerator for up to 2 weeks.
