How to make and egg salad and bacon sandwich that will knock your socks off.

This egg salad and bacon sandwich is like an egg salad BLT and it is very easy to make. Summer time is coming around and it is simply too hot to cook! This sandwich is a great solution.

You will find that this egg salad and bacon sandwich is creamy and delicious and served with lettuce, tomato, bacon and optional pickled jalapeños. I love jalapeños in my egg salad! The spicy and the brine really add a lot.

We are going to mash some hard boiled eggs and add capers, mayo and mustard to them. The capers always add a nice little salty, pickled flavor to egg salad which I love. We will then assemble our sandwich.

If you stayed away from the bread this egg salad is low carb and keto. You could serve it as a lettuce wrap. The creamy eggs go beautifully with the crisp bacon and lettuce.

How to Make an Egg Salad and Bacon Sandwich


4 hard boiled eggs — peeled
1 teaspoon chopped capers
1 heaping tablespoon of mayonnaise
2 teaspoons mustard
Salt & Pepper

Mash the eggs in a bowl with a fork. Add the rest of the ingredients and mix well. Go easy with the salt because you have salt in the capers and the mayo and mustard already.

FOR THE SANDWICH :
4 slices of bread of choice
4 slices of cooked bacon
4 to 6 slices of tomatoes — depending on the size
2 lettuce leaves — washed and dried
pickled jalapeño slices (optional)

Place a leaf of lettuce on one of the slices of bread.

Top with the tomatoes.

Spread egg salad on the other slice of bread. Top with jalapeños if using and the bacon slices.

Pick up the slice with the lettuce and tomato, carefully, and cover the one with the egg salad. Slice in half.

Serve and enjoy!
