12 oz. canned salmon, drained
2 tablespoons butter, divided

1/4 bell pepper, finely chopped
1 tablespoon chopped fresh dill or parsley
2 tablespoons sour cream
Juice of 1/2 lemon
1/2 teaspoon garlic powder
3/4 to 1 cup bread crumbs (preferably Panko)
1 egg, lightly beaten
Salt & pepper, to taste
Instructions:
Prepare the Salmon:
Drain the canned salmon and place it in a mixing bowl. Set aside.
Sauté the Vegetables:
In a skillet, melt 1 tablespoon of butter with 1 teaspoon of oil over medium heat. Add the finely chopped red onion and bell pepper. Cook for about 6 minutes, until the vegetables are softened.
