Hazelnut Cookies Recipe

Ingredients:
1 cup (130 grams) raw hazelnuts
1 cup (120 grams) all-purpose flour
1/2 teaspoon (3 grams) salt
1/2 cup (113 grams) unsalted butter, softened
1/4 cup (50 grams) sugar
1 egg yolk, room temperature
1 teaspoon (4 grams) vanilla extract
Instructions:
Preheat the oven: Heat your oven to 325°F (162°C) and line two baking sheets with parchment paper or a silicone mat.
Prepare the hazelnuts: Place the raw hazelnuts in a food processor and pulse until finely chopped. Be careful not to over-process and turn them into a paste. Set 3/4 cup aside for the dough, and reserve 1/4 cup for garnish.
Mix dry ingredients: In a medium bowl, whisk together the flour and salt.
Cream butter and sugar: In a separate large bowl, cream the softened butter and sugar together until smooth and light. Add the egg yolk and vanilla extract, and continue creaming until fully combined.
