Lemon Granita

This lemon granita is very easy to make and it is exquisite. Granitas are similar to Italian icees. They are frozen for 30 minute periods and then raked with a fork. You can make these of many different flavors.

Granitas are very refreshing and great summer desserts. I used Meyer lemons in this recipe but you can use regular ones. You are also substitute the lemon juice for grapefruit.

I like serving this with raspberries. It not only looks great with the contrasting color the flavors match beautifully.

This is what you are going to need to make this delicious lemon granita:

Serves four
1 cup sugar
1 cup water
1 ½ cups freshly squeezed lemon juice (Meyer would be great)
OR 1 ½ cups freshly squeezed grapefruit juice
1 tsp. Lemon zest

Place the sugar and the water is a saucepan and cook stirring until the sugar is dissolved. Turn off the heat and allow the syrup to cool down completely.

Add the lemon juice through a sieve into the cool syrup. Add the lemon zest and mix.

Place the mixture into a glass container and place it in the freezer, uncovered, for 30 minutes. Remove it from the freezer and rake it with a fork from one end to the other. The liquid will start freezing.

Return the container to the freezer and repeat the process every 30 minutes, 3 or 4 more times until the granita is fully frozen.

Serve the granita in a small bowl with some berries (optional). Enjoy!
