How to Make a Sausage and Peppers Hoagie
This sausage and peppers recipe can be served on pasta or polenta or in a sandwich. It is easy and simply delicious. This recipe is for two people and can be increased accordingly if you need to make it for more.
I used spicy Italian sausage for this recipe but you can use sweet if you prefer depending on what you like.
This is an easy weeknight meal that is also great for gatherings with friends.
This is what you will need to make this delicious and exquisite sausage and peppers recipe:
Serves two
2 sandwich rolls
Oil
2 Italian sausages – spicy or sweet
¼ green bell pepper – sliced
¼ red bell pepper – sliced
1/8th yellow onion – sliced
1/8th red onion – sliced
1 tsp. tomato paste
1 small tomato
1 tsp. fresh thyme leaves
1/4th cup red wine
Salt & Pepper
Chopped fresh basil leaves
Heat a little oil in a skillet and cook the sausage links until they are nicely browned on all sides. Don’t worry that they are not completely cooked through because they will finish cooking in the sauce we will be making. Remove them from the skillet and cut them into three equal parts.
Add the bell peppers and onions to the skillet and cook, stirring occasionally, until they start to brown – about 10 minutes. Add the tomato paste and mix it in with the vegetables. Cook for a few minutes stirring constantly.
Grate the tomato into the skillet and get rid of the peel. Mix well. Add the thyme and wine and season with salt and pepper. Return the sausages to the skillet and simmer until most of the liquid has evaporated and the sausage is completely cooked through.
Serve on pasta, polenta or in a sandwich. Enjoy!
