Beyond its delectable appeal, this versatile root vegetable boasts an impressive array of benefits that extend far beyond the confines of the kitchen. From its rich nutritional profile to its diverse culinary applications, the baked sweet potato emerges as a true superfood, celebrated for its ability to nourish the body and delight the palate simultaneously.

This is very easy to make and healthy. You can leave them without any dairy toppings to keep them vegan.

I do not wrap my sweet potatoes in foil. I scrub them, cut off the imperfections and rub them with olive oil. I then season the peel with salt & pepper and place them in the oven. This makes the peel a little crunchy and delicious. The inside will be creamy and sweet. Perfect for dinner with a side salad.

Sweet potatoes are different in different countries but you can go ahead and use this method with any kind you can find.

I topped mine with butter, sour cream and crushed chilies but you can also use olive oil, cinnamon, maple syrup, grated cheese or anything you prefer. This would go beautifully topped with a spicy chili.

This is how to bake sweet potatoes:

Serves two
2 sweet potatoes
Olive oil
Salt and Pepper
Optional – butter, sour cream, crushed chilies, cinnamon, maple syrup or whatever you like to eat with your potato

Heat your oven to 375 degrees F (190 C). Line a baking sheet with some aluminum foil.

Scrub the sweet potato, dry it and cut off all imperfections.

Drizzle the potatoes with some olive oil and rub all sides. Generously season with salt and pepper on all sides.

Place the baking sheet into the oven and bake the potatoes for about 45 minutes or until you can pierce them with a knife.

Remove them form the oven and enjoy as is or cut a horizontal slit on the potato and add butter or olive oil and any other topping you would like.

Enjoy!
