How to Make Vegan Blueberry Pancakes
These vegan blueberry pancakes have a light, fluffy texture with a slightly tangy flavor from the cider vinegar, which also helps to activate the baking powder, creating a tender crumb. The vanilla extract adds a hint of sweetness and warmth, complementing the juicy bursts of flavor from the blueberries. When topped with pure maple syrup, the pancakes gain a delightful sweetness that balances the tartness of the berries, making for a satisfying and comforting breakfast.
Vegan Blueberry Pancakes
Ingredients:
1 cup (190 grams) blueberries
1 cup (81 grams) plant-based milk of your choice (oat milk recommended)
1 tablespoon (14 grams) cider vinegar
1 teaspoon (5 ml) vanilla extract
1 cup (136 grams) all-purpose flour + 1 teaspoon (4 grams) for coating blueberries
1 tablespoon (14 grams) baking powder
1/2 teaspoon (3 grams) salt
2 tablespoons (25 grams) organic sugar
Pure maple syrup for serving
Instructions:
In a small bowl, toss the blueberries with 1 teaspoon of flour to coat them. Set aside.
In another bowl, combine the plant-based milk with the cider vinegar and vanilla extract. Stir and set aside to curdle slightly.
In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
Pour the milk mixture into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Gently fold in the floured blueberries. Let the batter rest for about 5 minutes.
Heat a small skillet over medium heat and lightly coat it with spray oil. Once the pan is hot, reduce the heat to medium.
Spoon the batter into the skillet to form pancakes. Cook until the edges are set, the bottom is golden brown, and bubbles start to form on the surface. Flip the pancakes carefully and cook for an additional 2-3 minutes on the other side.
Repeat with the remaining batter.
Serve the pancakes warm with pure maple syrup. Enjoy!
