Let’s make grilled Mahi-Mahi today. Mahi Mahi is a nutritious, versatile fish that lends itself to a wide variety of cooking methods and flavors. Its firm texture and mild, slightly sweet taste make it a favorite among seafood lovers. Although I used Mahi-Mahi in this recipe, any white firm fleshed fish will work.

Marinated Mahi Mahi

Ingredients:

  • 6 to 8 Mahi Mahi fillets
  • ¼ cup olive oil
  • Juice of 1 large orange
  • Juice of 1 medium lime
  • 2 scallions, chopped
  • 1 tablespoon orange zest
  • 1 teaspoon lime zest
  • ½ teaspoon ground cumin
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • 1 teaspoon salt

Instructions:

  1. Prepare the Marinade:
    • In a bowl, whisk together the olive oil, orange juice, lime juice, chopped scallions, orange zest, lime zest, cumin, black pepper, cayenne pepper, and salt.
  2. Marinate the Fish:
    • Place the Mahi Mahi fillets in a shallow dish or a resealable plastic bag.
    • Pour the marinade over the fillets, ensuring they are well-coated.
    • Cover the dish or seal the bag and refrigerate for 1 hour.
  3. Cook the Fish:
    • Remove the Mahi Mahi fillets from the marinade.
    • Choose your preferred cooking method:
      • Pan Fry: Heat a small amount of oil in a skillet over medium-high heat. Cook the fillets for 4-5 minutes on each side, or until the fish flakes easily with a fork.
      • Broil: Preheat the broiler. Place the fillets on a broiler pan and broil for 4-5 minutes on each side, or until the fish flakes easily with a fork.
      • Grill: Preheat the grill to medium-high heat. Grill the fillets directly on the grill grates or on a soaked cedar plank for 4-5 minutes on each side, or until the fish flakes easily with a fork.
  4. Serve:
    • Transfer the cooked Mahi Mahi fillets to a serving platter.
    • Serve immediately with your favorite sides.

• In a bowl whisk together ¼ cup olive oil, the juice of 1 large orange, the juice of 1 medium lime, 2 chopped scallions, 1 TBS zest, 1 tsp lime zest, ½ tsp cumin, ½ tsp black pepper, ½ tsp cayenne pepper and 1 tsp salt.

• Pour marinade over 6 to 8 Mahi-Mahi fillets.

• Cover and refrigerate fish for 1 hour.

• Remove fish from marinade and either pan fry, broil or grill. You can grill it directly on the grill or on a soaked cedar plank.
