This forbidden rice recipe is made with black rice and coconut milk. It is extremely easy to make and very clean. You can eat it as dessert or for breakfast.

You can sweeten this with any sweetener you like. I used pure maple syrup. You can also serve this with your favorite toppings (or nothing at all if you prefer). I served it with pomegranate seeds but nuts, toasted walnuts, berries or toasted coconut would work beautifully as well.

This recipe can be made with red or brown rice as well.

This is what you need to make this delicious forbidden rice:

Serves four
1 cup black or red or brown rice – washed
2 cups water
1 – 14 oz. (400 ml) can of coconut milk
2 TBS of sweetener (or more to taste) – sugar or brown sugar or agave or pure maple syrup
a pinch of salt
Chopped nuts or toasted walnuts or pomegranate seeds or berries for garnish (optional)

Place rice water and coconut milk into a pot and mix well. Bring to a simmer and simmer uncovered for 40 to 45minutes. Around 35 minutes decide if the rice is too dry. If so add a little more water. Turn the heat off once the rice is cooked al dente. You do not want this to get all mushy.

Turn the heat off and add the sweetener and salt and mix well. Serve as is or with your topping of choice.
