Rice & Veggies with Fried Egg

Here’s a nice vegetarian, super easy and frugal dish that is sure to satisfy the whole family! This dish can be on the table in 25 minutes! Here’s what you will need:

2 cups white rice
2/3 cup frozen peas, carrots and corn
2 minced garlic cloves
1 teaspoon tomato paste
Olive oil
Salt
4 to 8 eggs – depending on how many everyone will want

Rinse the rice.  Fill the kettle with water and bring it to a boil.

Coat the bottom of a pot with olive oil.  Add the rice, garlic and veggies.  Fry the rice, stirring often for two to three minutes.

Add four cups of boiling water and the tomato paste.  Mix well, making sure the tomato paste disintegrates completely – no tomato lumps please.  Season with salt to taste.

Cover the pot and lower the heat.  Steam rice for twenty minutes, until all liquid is absorbed.

Stuff rice into a ramekin and set upside down on a dinner plate.

Remove ramekin and serve along side one or two fried eggs.  Enjoy!

You can serve this rice with fried plantain, grilled chicken, pan fried pork chops, garlic shrimp or steak.  It is very versatile and satisfying!
