Here is a great recipe for left over chicken! It is easy, delicious and one of my kids favorite! Here’s what you need:
2 cups of cooked, shredded chicken
1 small white onion, finely chopped
2 garlic cloves, minced
1 large tomato, chopped
1/2 cup chopped cilantro
1 teaspoon ground cumin
Salt & Pepper
Olive oil
2 cups shredded cheese (Mexican, mozzarella, Monterrey Jack)
8 tortillas
Coat the bottom of a skillet with about 1 tablespoon of olive oil. Add the chicken, onion, tomato, garlic, cumin and cilantro. Season with salt & pepper. Mix well.
Cook for 7 to 10 minutes.
Heat another skillet and place a tortilla in the middle. Put 1/4 of the chicken in the tortilla and spread evenly.
Add 1/2 cup shredded cheese and cover with another tortilla.
Cook until bottom tortilla browns. Slide spatula under tortilla, place your hand on the top one pressing lightly and very carefully flip over. Work as fast as you can without letting the contents fall out. Cook until the other tortilla browns, pressing lightly with the spatula.
Remove quesadilla to a plate. Cut in quarters. Serve and enjoy!
