Here’s a very easy recipe for grilled zucchini, summer squash and carrots. Simply wash the veggies and cut them about 1/4 inch thick, lengthwise. Place them in a platter and drizzle them with olive oil, minced garlic cloves, crushed oregano, salt and pepper. Coat all the veggies well on both sides.
Make sure your grill is oiled well and place the veggies on direct medium heat.
Cook the veggies for 3 to 4 minutes and flip.
Cook for an extra 3 minutes and serve. Enjoy!
