Here’s a very easy recipe for grilled zucchini, summer squash and carrots. Simply wash the veggies and cut them about 1/4 inch thick, lengthwise. Place them in a platter and drizzle them with olive oil, minced garlic cloves, crushed oregano, salt and pepper. Coat all the veggies well on both sides.
