This is by far one of my favorite Fall roasted side dishes. I love the natural sweetness of the squash combined with the pears. I usually use Bartlett pears but you can use any kind you want.
Roasted Squash and Pears
Ingredients:
1 squash, peeled, seeded, and cut into medium-sized cubes
2 pears, peeled, seeded, and cut into medium-sized cubes
Olive oil
Salt and pepper to taste
Instructions:
Prepare the Ingredients:
Peel, seed, and cut the squash into medium-sized cubes.
Peel, seed, and cut the pears into medium-sized cubes.
Arrange in the Baking Dish:
Place the squash and pear cubes in a single layer in an oven-proof dish, ensuring they are not piled on top of each other.
Drizzle with olive oil and season with salt and pepper.
Roast:
Preheat your oven to 400°F (200°C).
Place the dish in the preheated oven.
Roast for approximately 35 to 40 minutes, until the squash and pears are cooked through and start browning in spots.
Serve:
Remove from the oven and serve as a side dish.
