Here is a very easy and satisfying meal that I learned from my husband. Although it is typically made with dried beef, I make it with ground beef. It tastes wonderful! Beef and Biscuits with White Sauce
Ingredients:
For the Beef:
2 pounds ground beef
4 scallions, chopped (reserve the dark green parts for garnish)
4 garlic cloves, minced
1/2 teaspoon dried thyme
Salt and pepper, to taste
For the White Sauce:
4 tablespoons butter
3 tablespoons all-purpose flour
4 cups milk
1/4 teaspoon ground nutmeg
Salt and pepper, to taste
To Serve:
8 buttermilk biscuits, halved
Instructions:
Prepare the White Sauce:
In a heavy pot, melt the butter over medium heat. Whisk in the flour gradually, whisking constantly for 3 to 4 minutes until the flour cooks and the mixture becomes a smooth paste (roux).
Add Milk and Seasoning:
Gradually pour in the milk, whisking constantly to prevent lumps. Season with salt, pepper, and ground nutmeg. Whisk continuously until the sauce comes to a soft boil and thickens. Remove from heat and set aside.
Cook the Ground Beef:
In a large skillet, brown the ground beef over medium-high heat, breaking it up with a spoon as it cooks. Season with salt and pepper to taste. Drain excess fat and set beef aside.
Prepare the Beef Mixture:
Wipe the skillet clean and add a little olive oil. Heat over medium heat and add the chopped scallions (white and light green parts). Cook until softened, then add minced garlic and cook for another couple of minutes until fragrant.
Combine and Season:
Return the cooked beef to the skillet with the scallions and garlic. Mix well. Season with salt, lots of black pepper, and dried thyme.
Add White Sauce:
Stir in as much of the prepared white sauce as desired into the beef mixture. Adjust seasoning if needed.
Serve:
To serve, cut each biscuit in half horizontally. Place two biscuit halves on each plate and spoon the beef mixture over the biscuits. Garnish with reserved chopped scallions (dark green parts) if desired.
