How to Make Carrot, Onion & Sardine Salad

Let’s make a sardine salad today.

Sardines are loaded with nutrients. They sport a huge concentration of Omega-3 fatty acids EPA and DHA, a huge concentration of vitamin B12, a huge concentration of vitamin D, tons of protein, trytophan, selenium, phosphorous, calcium and vitamin B3! They are also low in calories. 3.5 oz. of sardines in oil have about 200 calories. I would have to say that this is something you should add to your diet!

This salad also had carrots. Another nutrient blessing! They are loaded in vitamin A, K, C, fiber, potassium, manganese, vitamin B6, B1, B3, phosphorus and magnesium. I think we all should have this salad once a week!

This recipe has 3 main ingredients and it is so very good! If you like sardines you will love this! Make is as a first course or as a light dinner. This is what you will need for 2 people:

Carrot and Sardine Salad

Ingredients:

  • 3 large carrots, grated
  • 1 small white onion, minced
  • 1 can sardines (preferably in olive oil)
  • Olive oil
  • Salt, to taste
  • Baguette (optional, for serving)

Instructions:

  1. Prepare the Vegetables:
    • Grate the 3 large carrots into a mixing bowl.
    • Mince the small white onion and add it to the bowl with the grated carrots.
  2. Season the Salad:
    • Drizzle the carrot and onion mixture with olive oil.
    • Season with salt to taste.
    • Toss the ingredients well to combine.
  3. Serve:
    • Place the carrot and onion salad on a salad plate.
    • Serve with 2 sardines on the side.
    • Optionally, serve with slices of baguette.
