Chipotle BBQ Turkey Meatloaf Recipe
Ingredients:
1 pound ground turkey
1 small yellow onion, chopped
1/2 cup bread crumbs
1 egg
4 Chipotle peppers with adobo sauce (divided: 2 for the meatloaf and 2 for the glaze)
1 teaspoon prepared horseradish
2 teaspoons Worcestershire sauce
1 cup BBQ sauce of your choice (divided: 1/2 cup for the meatloaf and 1/2 cup for the glaze)
1 cup shredded cheese (smoked shredded cheese from Trader Joe’s recommended)
Salt and pepper to taste
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Meatloaf Mixture:
In a large bowl, combine the ground turkey, chopped onion, bread crumbs, egg, 2 Chipotle peppers (chopped) with adobo sauce, horseradish, Worcestershire sauce, 1/2 cup of BBQ sauce, shredded cheese, salt, and pepper.
Mix well until all ingredients are thoroughly combined.
Form the Meatloaf:
Shape the mixture into a loaf and place it on a baking/roasting pan.
Prepare the Glaze:
In a small bowl, mash the remaining 2 Chipotle peppers with the adobo sauce.
Mix the mashed peppers with the remaining 1/2 cup of BBQ sauce.
Apply the Initial Glaze:
Brush half of the BBQ/Chipotle glaze over the meatloaf.
Bake the Meatloaf:
Place the meatloaf in the preheated oven and bake for 30 minutes.
Apply the Final Glaze:
After 30 minutes, apply the remaining BBQ/Chipotle glaze over the meatloaf.
Finish Baking:
Continue baking for an additional 30 minutes, or until the meatloaf is cooked through and the internal temperature reaches 165°F (74°C).
Rest and Serve:
Remove the meatloaf from the oven and let it rest for about 10 minutes.
