  1. Prepare the Chicken:

    • Place the chicken breast-side down on a cutting board.
  2. Remove the Backbone:
    • Using kitchen shears or a sharp knife, cut along both sides of the backbone from the tail to the neck to remove it.
  3. Flatten the Chicken:
    • Open the chicken and turn it over so it is breast-side up.
    • Press firmly on the breastbone to flatten the chicken. You may hear a crack as the breastbone breaks.
  4. Season and Roast:
    • Season the chicken with your favorite spices, herbs, and marinades.
