How to Make Pasta Alfredo
Let’s make a Pasta Alfredo tonight but mix it with green herbs for a bright, earthy result.
Here’s a very, very easy vegetarian pasta to make. It is great for those day when you want to have dinner on the table pronto! Here is what you are going to need:
12 oz. spaghetti, fettuccine, linguine or spaghettini – cooked and drained
4 TBS butter
3 TBS flour
4 cups milk
1 cup shredded Parmesan cheese
1/4 cup basil leaves
1/4 cup parsley leaves
Salt & Pepper
Place the herbs in a blender. Add enough water to make a paste. Set aside.
Melt the butter in a heavy pot. Whisk in the flour, a little at a time. Whisk constantly for 3 to 4 minutes until flour cooks. Add the milk, whisking constantly in order to prevent lumps. Season with salt and pepper. Add the cheese and the blended herbs.
Whisk constantly until sauce comes to a soft boil, thickens and the cheese melts. Simmer for a few minutes.
Add the cooked pasta to the cheese sauce and toss to coat well. Garnish with chopped parsley and serve. Enjoy!
