Easy Rice Recipes – Rice Cakes with Caramelized Onions

Here’s an easy recipe with cooked white rice. It is a great way to use up left-over rice as well. This goes very nicely with caramelized onions and green peppers. Here is what you are going to need:

For the onions:
1 large white onion, sliced
1 small green bell pepper, sliced
2 large tomatoes, peeled, seeded and chopped
1 tsp fresh thyme
Salt & Pepper

Place the onions in a lightly oiled skillet. Cook for 8 to 10 minutes, stirring occasionally, until onions are lightly browned. Add the peppers, tomatoes and thyme. Stir to mix. Season with salt and pepper. Simmer for another 8 to 10 minutes. Set aside.

For the cakes:
1 cup cooked white rice
4 eggs – lightly beaten
1/2 cup flour
2 teaspoons baking soda
Salt & Pepper

Place the cooked rice in a bowl. Add the eggs, flour and baking soda. Mix well. Season with salt and pepper.

Heat a skillet with some oil. Spoon in the cakes, without crowding the pan. Cook until the bottom is browned. Carefully flip it and cook until the other side is browned as well. Serve with caramelized onions. Enjoy!
