Lentils and Hot Dogs

Lentils and hot dogs are delicious. They are easy to make and freeze very well. They are also quite popular even among the kids.

Lentils are loaded with nutrients like Vitamin A, calcium, magnesium and iron among others. It is also a great source of protein. It’s nutty flavor is very pleasant as well. This recipe includes hot dogs and caramelized onions.

Here is what you are going to need for this delicious lentils and hot dogs recipe:

Serves six
1 medium yellow onion – finely chopped
2 garlic cloves – minced
1 TBS chopped parsley
1 chili pepper – seeded and chopped (opt)
4 pear tomatoes – grated
1 TBS tomato paste
1 pound dry lentils – rinsed well
4 to 5 cups chicken broth
2 white onions – finely sliced
Salt/ Pepper/ Olive oil
Chopped parsley for garnish

Add about 2 TBS of olive oil in a pot. Heat it and add the onion. Cook, stirring occasionally, until onion starts to brown. Add the garlic, chili pepper and parsley. Mix and cook for another 4 to 5 minutes.

Grate the tomatoes into the pot. Mix. Add the tomato paste, lentils and 4 cups broth. Season with salt and pepper. Bring to a boil, reduce heat and simmer for about 30 minutes. Check liquid level after 20 minutes. If necessary add 1 more cup broth. Simmer until your lentils are tender.

While lentils are cooking, heat a large skillet with some oil. Add the onions and brown until deeply caramelized – about 30 minutes. Set aside.

Serve your lentil stew topped with the caramelized onion and garnished with some parsley and a side of brown rice. Enjoy!
