Penne with Chicken and Sun-Dried Tomatoes

This penne with chicken and sun-dried tomatoes can be made in under 30 minutes. It is frugal, delicious and super easy to make.

I used whole wheat pasta and canned corn for this recipe. You can definitely use regular pasta and frozen corn if you prefer. We are also going to add a little bacon for extra flavor. Make sure not to discard the rendered bacon fat so you can cook the chicken.

Here is what you are going to need for this:

Serves four
12 oz. raw penne pasta — cooked
6 bacon strips – chopped
1 chicken breast – skinned and diced
Olive oil
2 garlic cloves – minced
3/4 cups sun-dried tomatoes
1- 8 oz. can corn – drained
1/2 cup chopped basil
Salt & Pepper

Cook the bacon in a skillet. Set it aside once it is crispy. Keep the rendered fat in the pan.

Add the chicken. Season with salt and pepper and cook until evenly browned. Set the chicken aside.

Add a little olive oil to the pan. Add the garlic and cook for a couple of minutes until fragrant. Return the chicken and bacon to the pan. Add the sun-dried tomatoes, corn and pasta. Drizzle with some more olive oil. Add the basil and mix well. Heat through and serve. Enjoy!
