Watermelon Granita Recipe

This watermelon granita recipe is extremely refreshing and great for when the weather starts getting hot. Watermelons are naturally sweet which makes this dessert extra delicious.

Granitas are sort of like an Italian icee. You can make them from all sorts of fruits, chocolate and coffee. They are super simple to make but take a little time. You have to be patient as you will be raking the ice as it forms for a few times before these are ready. They are certainly worth the work.

A simple syrup is simply a cup of sugar dissolved in a cup of water. Stir it until it is all dissolved and cool it down completely before you use it for this. Make a simple syrup with organic sugar to keep this vegan.

Here is what you will need to make this flavorful and wonderful watermelon granita recipe:

Serves six to eight
6 cups chopped watermelon
1/3 cup simple syrup (use organic sugar for vegan)
2 TBS lemon juice

Place the watermelon, syrup and lemon juice in a blender. Blend – working in batches. Pass the blended fruit through a sieve into a bowl. Squeeze the pulp in the sieve to use all of your fruit. Get rid of the pits.

Place the juice into a 13×9 rectangular dish. Place the dish into the freezer and freeze for 30 minutes. Remove from freezer and scrape with a fork. Repeat this process every 30 minutes for 3 hours – until you have an icee.

Serve your granite in a nice glass. Garnish with some watermelon rind. Enjoy!

You can make this from many kinds of fruits such as lemon, grapefruit or peach.
