Homemade Popsicles – Cinnamon Ice Pops

These homemade popsicles are made with cinnamon sticks. They are extremely refreshing and superbly delicious. I dare you to eat only one.

The cinnamon makes these homemade popsicles purplish which add to their appeal. They also smell very welcoming. They are not overly sweet which leaves you refreshed without feeling full and heavy. If you like cinnamon, chances are you will love these ice pops.

I grew up eating these homemade cinnamon popsicles. In fact, they used to sell them at the school cafeteria when I was a child. That is many years ago but I still remember the pleasure of sucking on one of these and getting the sweet, cinnamony liquid in my mouth. Some flavors just stay with you.

Here is what you are going to need for these magnificent homemade popsicles:

Makes six 2.5 oz. popsicles

4 cups water
1 cup sugar
2 cinnamon sticks

Place all the ingredients in a small pot and stir until the sugar dissolves.

Bring mixture to a boil, reduce the heat and simmer for about 45 minutes — until the liquid turns a shade of purple.

Remove from the heat and cool completely. Fill your pop molds and freeze overnight. Remove from the molds and enjoy.
