Pecan pie is pretty traditional for Thanksgiving and Holiday season celebrations. If is nutty and chewy and crunch and creamy and sticky and just exquisite as can be. Serve it with some cream or ice cream and your dessert will speak for itself.
This easy pecan recipe can be made even easier if you use store bought pie crust. You will need a 9-inch crust which you will find in the dessert freezer at the grocery store. Of course, you can also make your own flaky dough at home without much effort if you would prefer.
Make sure to use very fresh pecans for this pie. Nuts can go stale fairly quickly and you do not want to spoil it with rancid flavors.
This is what you are going to need in order to make this luscious and easy pecan pie recipe:
5 large eggs
1 ¼ cup light brown sugar
1/3 cup light corn syrup
1/3 cup dark corn syrup
1 tsp. vanilla
½ cup melted butter
1 TBS rum
1 cup chopped pecans
1 – 9 inch pie shell
Whole pecans for garnish
Line a 9 inch pie plate with dough. Preheat oven to 350 degrees F (180 C).
Place the eggs, brown sugar, corn syrups, vanilla, butter and rum in a pot. Whisk for a few minutes until the sugar has melted and everything is incorporated. Remove from heat and add chopped pecans. Mix well.
Fill your pie shell with the pecan mixture. Garnish with whole pecans.
Place pie in oven and bake for about 45 minutes until filling is set. Remove pie from oven and cool down. Serve and enjoy.
Note: If pie edges get too brown, remove the pie from the oven and carefully cover the edges with foil.
