How to Make Marinated Chicken

Grilled Marinated Chicken

Marinating chicken breast offers several advantages that can enhance both the flavor and texture of the meat. Here are some of the key benefits:

Flavor Enhancement

  1. Deep Penetration of Flavors: Marinating allows the flavors of the marinade to penetrate deep into the chicken breast, ensuring that every bite is flavorful. The acids, herbs, and spices in the marinade infuse the meat with a rich and complex taste.
  2. Versatility: Marinades can be tailored to a wide range of flavor profiles, from tangy and spicy to sweet and savory, allowing for diverse culinary experiences.

Improved Texture

  1. Tenderizing Effect: Ingredients like vinegar, citrus juice, yogurt, or buttermilk in marinades have a tenderizing effect on chicken breast. They help break down muscle fibers and connective tissues, resulting in a more tender and juicy texture.
  2. Moisture Retention: Marinating helps the chicken breast retain moisture during cooking, preventing it from becoming dry and tough. The liquid component of the marinade adds extra moisture, which is absorbed by the meat.

Health Benefits

  1. Reduced Carcinogens: Marinating chicken can reduce the formation of potentially harmful carcinogens (such as heterocyclic amines) that can form when meat is cooked at high temperatures, particularly grilling or broiling.
  2. Nutrient Boost: Marinating with ingredients like garlic, ginger, herbs, and citrus fruits can add additional nutrients and antioxidants to the chicken, contributing to a healthier meal.

Convenience and Efficiency

  1. Meal Prep: Marinating chicken breasts can be a convenient way to prepare meals in advance. Marinated chicken can be stored in the refrigerator or freezer, ready to be cooked when needed, saving time on busy days.
  2. Enhanced Cooking Process: Marinated chicken often cooks more evenly and quickly. The moisture from the marinade can help prevent overcooking, and the sugars in the marinade can help create a flavorful caramelized crust.

Culinary Versatility

  1. Wide Range of Cooking Methods: Marinated chicken breasts can be grilled, baked, broiled, sautéed, or stir-fried, making them suitable for various recipes and cooking techniques.
  2. Adaptable to Different Cuisines: Depending on the ingredients used, marinades can impart flavors from various cuisines, such as Mediterranean, Asian, Latin American, or Middle Eastern, allowing for a broad culinary repertoire.

Economical Advantage

  1. Using Budget Cuts: Marinating can enhance the flavor and texture of more economical cuts of chicken, making them as appealing as more expensive options.
  2. Reducing Waste: Marinades can be made from pantry staples and leftover ingredients, reducing waste and making use of available resources efficiently.

Practical Tips for Marinating

  1. Marinating Time: For chicken breasts, marinating for at least 30 minutes is beneficial, but for deeper flavor, marinate for several hours or overnight. However, avoid marinating for too long (over 24 hours) as the acids can start to break down the meat excessively.
  2. Proper Storage: Always marinate chicken in the refrigerator to prevent bacterial growth. Use a non-reactive container like glass, stainless steel, or a resealable plastic bag.
  3. Discard Used Marinade: Do not reuse the marinade that has been in contact with raw chicken unless it has been boiled to eliminate any harmful bacteria.

By marinating chicken breast, you can significantly enhance its flavor, tenderness, and juiciness, making your meals more enjoyable and versatile.

Chicken tastes great on the grill and better even when it is marinated. The length of grilling time will vary by the thickness of your meat. Thick breasts will take up to 10 minutes per side on medium direct heat. These boneless, skinless thighs were done in 14 minutes – 7 minutes per side on medium direct heat.

This marinade is easy to make and can double as a salad dressing! Go ahead and plan ahead because you want the chicken to marinade for at least 30 minutes.

Here is what you will need for this:
6 skinless, boneless chicken thighs
1/2 cup olive oil
1/2 cup red wine vinegar
1 teaspoon sugar
1 tablespoon crushed oregano leaves
Salt & Pepper

Whisk together the oil, vinegar, sugar and oregano leaves.

Rinse and pat dry the chicken. Generously season it with salt and pepper. Place it in a container and pour the marinade over it. Make sure it is all covered by moving the chicken around. Cover and refrigerate.

Heat the grill on high for 20 minutes. Reduce it to medium heat. Clean the grids and oil them with a wad of paper towel soaked in olive oil. Remove the chicken from the marinade – discard marinade. Place the chicken thighs on the grill and cook for 7 minutes.
