How to Make Best Chicken Noodle Casserole

This is the third recipe I made from a batch of chicken that I bought for $2.85. I made a chicken stock, chicken salad with apples and this chicken noodle casserole. It is not only a great meal on a budget it is delicious!

Chicken Noodle Casserole Recipe

Ingredients:

  • 3 cups cooked chicken, shredded or diced
  • 8 oz egg noodles
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup milk
  • 1 cup frozen peas and carrots (optional)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 tbsp butter, melted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.
  3. Prepare the Sauce: In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, sour cream, milk, garlic powder, onion powder, salt, and pepper. Mix until smooth and well combined.
  4. Mix in the Ingredients: Add the cooked chicken, cooked egg noodles, frozen peas and carrots (if using), and shredded cheddar cheese to the sauce mixture. Stir until everything is well coated.
  5. Assemble the Casserole: Transfer the mixture to a greased 9×13-inch baking dish, spreading it out evenly.
  6. Prepare the Topping: In a small bowl, combine the breadcrumbs, grated Parmesan cheese, and melted butter. Mix until the breadcrumbs are well coated with butter.
  7. Top the Casserole: Sprinkle the breadcrumb mixture evenly over the top of the casserole.
  8. Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.
  9. Garnish and Serve: Remove the casserole from the oven and let it cool slightly before serving. Garnish with freshly chopped parsley if desired.
