How to Make Green Bean Salad

Green Bean Salad with Cauliflower

Cauliflower and green beans go very well together. This salad is healthy and easy to make. It is loaded with nutrients and is low in calories as well. Green beans have antioxidant properties and are loaded in vitamin K, Vitamin C., Vitamin A, Fiber, Manganese, potassium, folate, iron, magnesium and vitamin B. A cup of cooked green beans only has 43 calories. Cauliflower has tons of vitamin C, vitamin K, folate, vitamin B6 and Omega 3 fatty acids. A cup of cooked cauliflower only has 28 calories!

Steamed Green Bean and Cauliflower Salad

Ingredients

  • 1 cup green beans, stringed and cut into 1-inch pieces
  • 1 cup cauliflower florets
  • 2 tomatoes, peeled and chopped
  • 1/4 cup finely sliced red onion
  • Olive oil
  • Balsamic vinegar
  • Salt

Instructions

  1. Steam the Vegetables: Place the green beans and cauliflower florets into a steamer. Steam until cooked through but still crisp.
  2. Combine the Ingredients: Once the vegetables are cooked, transfer them to a bowl. Add the peeled and chopped tomatoes and the finely sliced red onion.
  3. Season the Salad: Drizzle olive oil and balsamic vinegar over the vegetables. Season with salt to taste.
  4. Toss and Serve: Toss the ingredients well to coat evenly. Serve immediately and enjoy!

This simple yet flavorful salad can be enjoyed as a side dish or a light meal.
