Roasting a whole chicken is a classic and comforting dish that results in juicy meat with a flavorful, crispy skin. This recipe adds a unique twist with a glaze made of peanut butter, honey, mustard, and curry powder, creating a deliciously savory and slightly sweet coating that enhances the chicken’s natural flavors.
Recipe for Roasted Whole Chicken
Ingredients
1 whole roasting chicken, cleaned, rinsed, and pat dried
1/4 cup peanut butter
1/4 cup honey
2 tablespoons mustard
1 heaping tablespoon curry powder
Salt and pepper
Instructions
Preheat the Oven: Preheat your oven to 375°F (190°C) and place your roasting pan inside to heat.
Prepare the Chicken: Season the chicken generously with salt and pepper, both inside and out.
Make the Glaze: In a small bowl, whisk together the peanut butter, honey, mustard, and curry powder until smooth.
Coat the Chicken: Coat the chicken on both sides with the peanut butter mixture, ensuring an even layer.
Roast the Chicken: Place the chicken on a roasting pan rack, breast side down. Carefully place the rack inside the preheated roasting pan in the oven.
Initial Roasting: Cook the chicken for 15 to 20 minutes, keeping an eye on it to ensure it doesn’t get too dark.
Flip and Continue Roasting: Flip the chicken and cook for an additional 15 minutes.
Tent and Finish Cooking: Loosely tent the roasting pan with aluminum foil and continue cooking for about another 60 minutes. The average chicken is 3 to 3 1/2 pounds, so calculate approximately 20 minutes per pound as a general rule of thumb. Ensure the internal temperature reaches 165°F to 170°F (74°C to 77°C). You can also check doneness by pulling the thigh away from the body; if the juices run clear and are not pink or red, the chicken is likely done.
Rest the Chicken: Remove the roasting pan from the oven and let the chicken sit for about 10 minutes before carving.
Serve: Carve the chicken and serve with your favorite side dishes. Enjoy!
