Here’s a healthy, quick and cheap weeknight meal. You can use spinach in lieu of Swiss chard if you prefer. Either way you will end up with a great dish! Here is what you are going to need:
2 pounds Swiss chard or spinach – boiled and pureed in the blender
4 TBS butter
3 TBS flour
4 cups milk
2 tsp. ground nutmeg
Salt & Pepper
4 hardboiled eggs – peeled and halved
8 slices de-crusted sandwich bread – toasted
Melt the butter in a heavy pot. Whisk in the flour, a little at a time. Whisk constantly for 3 to 4 minutes until flour cooks. Add the milk, whisking constantly in order to prevent lumps. Season with salt and pepper. Add the nutmeg and the pureed Swiss chard or spinach. Whisk constantly until sauce comes to a soft boil and thickens.
Place 2 toasts on a plate. Top with the puree and 2 halved eggs. Serve and enjoy!
