Stuffed Avocado with Shrimp

This stuffed avocado with shrimp recipe is made with crab as well. You can use lump crab or artificial crab also known as surimi. We are going to make a seafood salad and then stuff it into some ripe and delicious avocados.

This is an easy meal that is fresh and light. It is great as a light meal. Perfect for hot summer days as well.

You can purchase cooked shrimp if you want but the truth is boiling it is no big deal. Shrimp cooks very quickly and will be ready in minutes. Here is a short video on how to boil shrimp. One important thing to remember when cooking shrimp is to remove the black vein that runs down the back of the shrimp. This is the intestine and does not taste well.

This is what you are going to need for this stuffed avocado with shrimp recipe:

2 cups artificial or lump crab – separated
10 boiled shrimp – chopped
1 scallion – chopped
1 large celery stalk – chopped
1/2 tsp. chopped celery leaves
1/2 large lemon – juiced
1/2 cup mayonnaise
2 Avocados – halved and peeled
Lettuce leaves

Place all ingredients in a bowl. Mix well. Line a plate with lettuce. Place the avocado halves on top. Fill each one with seafood salad. Serve.
