How to Make Granita – Grapefruit

Granitas are sort of an Italian icee. They are refreshing and very easy to make. They can be made from oranges, tangerines, lemons, peaches, watermelon, chocolate and coffee.

This granita recipe is made with grapefruit juice. You will find that this recipe is very easy. The longest time you will spend on it will be freezing and raking it.

We will serve this grapefruit granita with some strawberry coulis. A coulis is a syrup made from fruits or vegetables and is used as a complement to different meals. In this case, the strawberry coulis will cut into the subtle tangy flavor of the grapefruit. Having said that, a coulis is optional. You can certainly enjoy this as is. This is a great dessert for hot summer days.

Here is what you need to do for this deliciously refreshing granita recipe:

2 cups grapefruit juice
1 cup water
1/3 to 1/2 cups sugar
3 pieces grapefruit rind with no white lining

Place the juice, water, sugar and rind in a small pot. Stir until sugar is melted. Bring to a boil. Turn off the heat and cool down.

Strain the juice into a 9×13 pyrex dish. Place in the freezer and freeze for 45 minutes. Remove from freezer and rake with a fork until small pieces of ice form. Return to the freezer for another 30 minutes. Repeat the raking process and the freezing four more times.

Serve your granita as is or topped with a berry coulis. Enjoy!
