Tomato Basil Pasta

Tomato basil pasta has to be the one of the easiest meals you will ever make. The longest thing here will be to cook the pasta. Chop, chop and you are ready to eat.

This is one of those fantastic hot summer day meals when it is too hot to cook, as the tomatoes and basil are raw. It is almost like a pasta salad. Tomatoes are at their peek at this time of the year and they are sweet and juicy.

You will love the freshness of this dish. It does have fresh garlic which will maybe prevent you from kissing anyone who has not eaten this with you. . .he he.

You might think that this recipe has too much olive oil. However, the noodles will absorb the oil so don’t worry about it being greasy. Serve this with some shredded Parmesan cheese, a piece of crusty bread and you will have a bunch of satisfied happy campers.

Here is what you are going to need for this quick and easy tomato basil pasta:

Serves six

4 medium ripe tomatoes — seeded and chopped
1 large garlic clove — minced
2 TBS of fresh chopped basil
1/2 cup olive oil
Salt & Pepper
12 oz. of cooked pasta — I used whole grain
Parmesan cheese (optional)

Place the tomatoes, garlic, basil and olive oil in a bowl. Season with salt and pepper and mix gently.

Add the cooked pasta and toss until all the pasta is coated. Serve with Parmesan cheese if using. Enjoy!

    I tried this Tomato Basil Pasta recipe. It turned out pretty good. Since I’m the only one who eats my food, I’ve been eating this for almost a week. Of course, I forgot you said “fresh” basil, and I used dried basil instead, but it still turned out good. Thanks for all you do.
