Muffin Recipe – Passion Fruit and Berries

This muffin recipe will render you an out of this world muffin that is crumby, tender and a highly enjoyable treat. These muffins are not overly sweet and have a subtle tang to them due to the passion fruit and the berries.

Passion fruit is also known as granadilla or Maracuyá. It is native of South America but is grown all over the world. The pulp is full of seeds and it can be quite tart. When making juice it is blended very lightly and then passed though a sieve. We will be using the whole pulp for this muffin recipe – seeds and all which will give it a very pleasant crunch.Passion fruit can have a purple or yellow shell. Look for it in your produce section. Sometimes you can find it in bottled or frozen form.

This muffin recipe is super easy to make and the dough is dry. You will need to use a spoon to help you place it in the muffin cup. You will also be placing a few berries in the middle which will deliver a pleasant surprise when bitten into. The berries can be frozen — thaw them for the recipe — so this can be made anytime of the year. . .provided you can find passion fruit!

This is what you need to do for this exotic and delicious muffin recipe:

Makes 18 muffins
3 cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
½ tsp. of salt
¾ cups sugar +more for tops
2 eggs
1 cup plain Greek yogurt
½ cup melted and cooled unsalted butter
½ cup passion fruit pulp – seeds and all (this is about 4 medium)
½ cup blueberries and raspberries (can be frozen – thaw them)
Confectioner’s sugar

Preheat the oven to 375 F (190 C) and line 18 muffins pans with liners.

Mix the flour, baking powder, baking soda, salt and sugar in a bowl. Make a well in the middle and set aside.

Place the eggs in another bowl and beat lightly. Add the yogurt, butter and passion fruit. Whisk to mix well and pour into the middle of your dry ingredients. Carefully mix with a wooden spoon until all the flour is wet and you have uniform dough.

Fill each muffin cup half way and arrange 3 berries on top. Cover the berries with more dough and sprinkle with some sugar.

Place the muffins into the oven and bake for 13 to 15 minutes. Once a toothpick inserted in the middle comes out clean your muffins are ready. Remove from oven and allow to cool down completely.

Sift some confectioner’s on the muffins and serve.
