In this quinoa recipe we will be mixing sweet potato, quinoa and black beans. Add all the spices and you have a wonderful balance of flavor and nutrition.
These patties are low fat, full of protein and vegan to boot. Sometimes one has the impression that eating healthy — ans especially vegan — food is boring and blah. This quinoa recipe will prove otherwise.
Make sure to allot enough time to chill these patties before cooking them or they will be too soft. Once you have them in the hot pan, flip them very carefully so they retain their form.
I like to serve them topped with my favorite salsa. In this case I used a Chipotle Spicy Salsa.
Here is what you are going to need in order to make this delicious and healthy quinoa recipe:
Makes eight patties
2 large sweet potatoes — about 3 cups mashed
1 -15 oz. can black beans – drained and rinsed
¼ cup finely chopped red onion
2 garlic cloves – minced
¼ cup finely chopped bell pepper
2 TBS chopped parsley
1 tsp. of cumin
1 tsp. of paprika
1 tsp. salt
1 tsp. black pepper
1 chili pepper – seeded and membrane removed – finely chopped (optional)
1 TBS of dried oregano
½ cup bread crumbs – I used Panko
1 cup cooked quinoa
2 TBS olive oil
Scrub the sweet potatoes and cook them in a pot with water. Peel them and mash them in a bowl. Add all of the ingredients – except for the oil.
Mix ingredients well and form 8 patties. Refrigerate them for 30 minutes before cooking.
Heat a skillet with the olive oil and add the patties. Cook until bottom side forms a brown crust – about 2 minutes. Flip and cook for another 2 minutes. Serve with salsa if you want. Enjoy!
