Here’s a simple and delicious banana muffin recipe:

Banana Muffins

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 large ripe bananas, mashed
  • ¾ cup granulated sugar
  • 1 egg, beaten
  • ⅓ cup butter, melted
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chopped walnuts or chocolate chips

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Prepare the wet ingredients: In a large bowl, mash the bananas with a fork until smooth. Stir in the sugar, beaten egg, melted butter, and vanilla extract until well combined.
  4. Combine wet and dry ingredients: Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to overmix, as this can make the muffins dense.
  5. Add optional mix-ins: If using, fold in the chopped walnuts or chocolate chips.
  6. Fill muffin tin: Spoon the batter into the prepared muffin cups, filling each about ¾ full.
  7. Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Cool: Allow the muffins to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
  9. Serve: Enjoy your banana muffins warm or at room temperature. They’re perfect for breakfast, a snack, or dessert!
