Ingredients:

  • Potatoes:
    • Russet potatoes (quantity as desired)
    • Olive oil (for coating)
    • Salt (to taste)
    • Black pepper (to taste)
    • Aluminum foil (for wrapping)
  • For Serving:
    • Butter
    • Sour cream
    • Bacon bits
    • Chives, chopped

Instructions:

  1. Prepare the Grill:
    • Gas Grill: Turn on half of the burners to create a zone of indirect heat.
    • Charcoal Grill: Pile the hot coals onto one side of the grill to establish direct and indirect heating zones.
  2. Prep the Potatoes:
    • Scrub the Russet potatoes thoroughly under running water to remove any dirt.
    • Pat them dry with a clean towel.
    • Using your hands or a brush, coat each potato evenly with olive oil.
    • Season each potato generously with salt and black pepper.
    • Wrap each seasoned potato individually in aluminum foil, ensuring they are sealed well.
  3. First Cooking Phase:
    • Place the foil-wrapped potatoes on the unlit side (indirect heat zone) of the grill.
    • Close the grill lid to maintain consistent heat.
    • Cook the potatoes for 1 hour. This slow cooking allows the potatoes to become tender inside.
  4. Second Cooking Phase:
    • After 1 hour, carefully use tongs to remove the foil from each potato. Be cautious of the hot steam.
    • Place the unwrapped potatoes back on the unlit side of the grill.
    • Close the grill lid and cook for an additional 20 minutes. This step helps to crisp up the potato skins.
  5. Serve:
    • Once cooked, remove the potatoes from the grill.
    • Serve them hot with desired toppings: butter, sour cream, bacon bits, and chopped chives.
