Easy slow cooker recipes – white kidney bean stew. Delicious and healthy, will cook itself while you are doing other things. You don’t even need to soak the beans. All you do is add everything to the slow cooker and forget about it.
Beans are loaded in nutrients and are very good for you. They are also very good. By using dry beans instead of canned ones you will not have to deal with any extra additives that manufacturers put into their cans.
In order to make this easier I used store bought salsa. However, you can definitely make your own if you prefer. This spicy tomato and chipotle salsa would be wonderful in this recipe.
You can use any kind of bean for this recipe. Serve it with some rice if you woud like.
Here is what you need for this very easy slow cooker recipe:
12 oz. dry white kidney beans (or any other kind of bean for that matter!)
8 cups water
1 cup store bought salsa (I used Pace Picante Sauce – medium)
1 tablespoon ground cumin
1 teaspoon ground garlic
1 tablespoon dry oregano
1 teaspoon ground coriander
Salt & Pepper
Place all the ingredients in a Crock-pot.
Turn it on high. Cook for 8 hours.
Serve with rice.
