This wonderful apple salad is made with lettuce, toasted walnuts, celery, dried cranberries, mint and buttermilk dressing. It exquisite and a delight to eat. The apple and celery add a wonderful crunch to this and the dried cranberries add a tart sweetness that completes it.
If you can not find buttermilk you can easily make a substitute with whole milk and vinegar or lemon juice.
This is an elegant salad that you should not hesitate to serve on special occasions. It is sort of a take on Waldorf salad with a twist.
Make sure to toast your walnuts. It is easy to do so, although you need to be vigilant not to burn them, and it makes all the difference in the world. By toasting the nut you will enhance its flavor. You will definitely notice a difference.
This is what you need to make this delicious apple salad:
Serves six
4 cups lettuce – preferably Bib – washed and dried
½ cup toasted walnuts
2 apples – washed, cored and chopped
2 celery stalks – finely chopped
1 cup mint leaves – washed
½ cup dried cranberries
Buttermilk dressing
Place ½ a cup of walnuts in a 350 degree oven. Toast for about 10 minutes making sure to constantly shake the pan. Be careful not to burn them! Cool them down completely.
Place all of your ingredients in a large bowl. Add buttermilk dressing. Toss and serve.
