Red Potato Salad – Vegan Recipe

This red potato salad has no mayonnaise and is very healthy. It is also easy to make, affordable and absolutely delicious.

The red potatoes will be cooked in their skin and then smashed in a bowl. They are tender and soft and absorb the salt from the water they boil in. The woody flavor of the parsley and the olive oil complete this red potato salad perfectly.

This red potato salad is great to serve as a side for anything off the grill. Make sure to use a nice extra virgin olive oil for this so that you taste it at its absolute best.

This is what you are going to need for this delicious red potato salad:

Serves four to six

24 baby red potatoes
1/2 cup chopped parsley
Olive oil
Coarse salt

Scrub the potatoes and place in a pot of salted water. Cook until a fork pierces the potatoes easily, about 20 minutes. Drain the water and let the potatoes cool down completely. Place them in a bowl and smash them with the back of a tablespoon. Add the parsley. Drizzle with enough olive oil to coat all the potatoes. Season with salt. Toss the salad being careful not to mash the potatoes. Serve.
