Thai Noodles with Peanut Sauce

Thai noodles with peanut sauce are absolutely fantastic. Add some shrimp to them and you have a memorable dish. Not only is it out of this world delish it is also very easy to make.

For this recipe you can use rice or regular noodles. Just make sure you are using a very thin pasta such as spaghettini so that it resembles the rice ones. Thai noodles are loved by kids and adults alike. I love making this dish.

One of the great things about cooking dishes like Thai noodles is that you only need a small amount of ingredients such as shrimp or chicken. This makes this exotic dish quite frugal.

Here is what you are going to need for these Thai noodles with peanut sauce:

Serves six

½ a pound shelled and deveined shrimp
2 TBS lemon juice
1 tsp. sesame oil
1 TBS finely chopped cilantro (coriander)
1 tsp. lemon zest
1 TBS minced fresh ginger
4 minced garlic cloves

Place the shrimp in a bowl. Add all the ingredients and mix to coat well. Cover and refrigerate for 30 minutes.

½ cup soy sauce
¼ cup honey
2 TBS rice or white vinegar
1 tsp. fish sauce
¼ cup creamy peanut butter

Place all the ingredients in a bowl, whisk until creamy and set aside.

12 oz. rice noodles or thin spaghetti
2 TBS vegetable or peanut oil
2 scallions – finely chopped (save the dark green parts for garnish)
4 garlic cloves – minced
1 TBS minced fresh ginger
An assortment of julienne veggies for stir frying – carrots, snow peas, broccoli, baby corn, green beans or anything you want

If you are using rice noodles, place them in a bowl and cover them with boiling water. Allow them to soak for 10 minutes. If you are using spaghetti, cook it per package instructions, drain it and shock with cold water. Set aside.

Heat 1 TBS of oil in a wok or large skillet. Add the shrimp and cook for 2 minutes – until it changes color. Remove from the pan and discard the excess liquid. Wipe the skillet with a paper towel or napkin.

Add the remaining oil and heat well. Add the scallions, garlic and ginger. Mix well and cook for about 2 minutes. Add the veggies and cook for 4 to 5 minutes. Return the shrimp and noodles to the pan. Add the peanut sauce and mix well. Cook for another 4 or 5 minutes until the sauce thickens and the noodles acquire the peanut taste. Remove from the heat, add the scallion greens and serve. Enjoy!
