Sautéed Squash with Sun-Dried Tomatoes and Kalamata Olives
Ingredients:
- 2 medium squashes (e.g., zucchini or yellow squash)
- 2 tablespoons olive oil
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup Kalamata olives, chopped
- Salt and pepper to taste
Instructions:
- Prepare the Squash:
- Slice the squashes into thin pieces.
- Heat the Skillet:
- Heat a large skillet over medium-high heat.
- Add 2 tablespoons of olive oil and heat until very hot.
- Sauté the Squash:
- Add the sliced squash to the hot skillet.
- Sauté for 5 to 6 minutes, stirring occasionally, until the squash is tender and slightly golden.
- Add Tomatoes and Olives:
- Chop the sun-dried tomatoes and Kalamata olives.
- Add the chopped sun-dried tomatoes and Kalamata olives to the skillet with the squash.
- Finish Cooking:
- Continue cooking for an additional 2 to 3 minutes, stirring occasionally, until the squash is cooked through and the flavors are well combined.
- Season and Serve:
- Season with salt and pepper to taste.
